Mozaic Restaurant to Hold a Special French Winter Black Truffles Dinner

UBUD, Bali (BPN) – The Chris Salans group announces a very special single-night event at Mozaic Restaurant in Ubud on Saturday, January 22nd, 2022, where French Winter Black Truffles will take center stage at a 5-course or 7-course dinner presented with optional premium wine pairings.

The French Winter Black Truffle, Tuber Melanosporum, is a rare uncultivated fungus that can only be harvested from the wild.

The extreme difficulty involved in finding truffles and their delightful forestière-taste that is at once musky, earthy, and possessing a singularly aromatic flavor – make these much-prized forest fungi one of the most expensive and luxurious ingredients in French gastronomy.

The truffles featured at The Mozaic Restaurant in Ubud, for dinner on the 22 January were meticulously hand-selected by Chef Chris Salans at the truffle mart of Michelin Star Chef Jacques Pourcel in Montpellier in Southern France.

“The truffles I brought back are from one of the best areas in France, and their aroma is unique and very special. I am excited to share these during the coming special dinner at Mozaic Restaurant,” Chris said.

To showcase these Montpellier truffles on 22 January 2022, Chef Chris Salans will prepare two set menus: a 5-course set menu and a 7-course set menu. There will also be special menus available for vegetarians and vegans.

Butter Poached Lobster Tail.

Dishes such as Seared Oysters with Wild Mushroom and Black Truffle Cappuccino, Butter Poached Lobster Tail with Truffle Wonton and Consommé and a tantalizing cut of Wagyu Beef Marbling 8+ will be paired with Hearts of Palm and Black Truffles.

For dessert, Chef Salans will present a daringly different Mango Flower made of Valrhona White Chocolate, Fresh Mango, and Black Truffles.

Paired premium wines, carefully selected by Wine Director Cok Bagus Senajaya, will be releasing some of his most-prized vintages secreted away in Mozaic’s Wine Cellar for this unique culinary occasion.

Dinner service for the French Winter Black Truffles Dinner on Saturday, 22 January 2022, will take place from 6 until 9 pm.

Due to the limited supply of this precious winter black truffles, and in order to maintain the highest levels of new normal, the dinner will be limited to 45 guests maximum. Reservations for dinner can be made by contacting Mozaic or by visiting Mozaic’s website.
